Tonight was not a hit initially with the kids :(
"I don't want the vegetables!"
"I am not going to eat the chicken!"
But after they tasted it, they were singing a different tune!
"Oh this is good chicken!"
Joe and I both like it.
This is one of my sister's favorite!
Creamy Chicken and Penne Pasta
1 Tbsp. butter
1/2 tsp. salt
3-4 boneless chicken breasts
2 cups chicken broth
3 cups sugar snap peas
1 cup carrots, julienned
1 small onion, cut wedge slices
1 jar whole mushrooms, drained
1 (8 oz.) cream cheese, cubed
1 cup shredded parmesan cheese
6 cups penne pasta, uncooked
In large skillet over medium heat, melt butter, add chicken. Cook 3 minutes or until chicken is no longer pink, stirring occasionally. Add carrots, inion, mushrooms, broth and salt; heat boiling. Reduce heat; add peas, cover and cook 3-5 minutes or until vegetables are crisp tender and chicken is done. Meanwhile, cook pasta according to package directions; drain. Stir cream cheese into chicken mixture until completely melted and smooth. Remove from heat; stir parmesan cheese. Serve over hot pasta.
