What's for Dinner? Day 68

We had delicious Black Pepper Chicken tonight for dinner.

The kids even liked it--Joe didn't get home from work until late, so he can't weigh in :)

Black Pepper Chicken

2-3 lbs boneless chicken breast, cut in bite size pieces
8 Tbsp soy sauce
2 tsp coarse black pepper
2 cups chicken broth
1 Tbsp ginger (I used fresh)
4 Tbsp cornstarch
12 green onions, sliced
2 tsp sesame oil

Combine chicken with 4 Tbsp soy sauce and black pepper.  Marinate for 30 minutes.  Drain chicken, reserving marinade.  Combine marinade with broth and remaining soy sauce.  Heat wok over high heat; add oil.  Add ginger, cook until fragrant.  Add chicken, stir-fry until done.  Add green onions; stir fry 2 minutes.  remove meat and onions.  Add broth mixture and cornstarch and cook until thickened.  Return meat to sauce.  Sprinkle with sesame oil.

**May add 2 cups of vegetables: mushrooms, carrots, ect.  Blach vegetables for 30 seconds.  Stir fry until tender.

Serve with rice (we had brown rice)
