Corned Beef and Cabbage. Day 108

One of Joe's favorite meals!  We usually get to have it on St. Patrick's Day but yesterday was so crazy that we didn't get to have it.

So we had it tonight!

I usually boil it but being Sunday and I had Ward Council I thought I would try the AllRecipes crockpot version.  It tasted the same to me!

Crockpot Corned Beef and Cabbage

4 large carrots, peeled and cut into matchstick pieces
10 baby red potatoes, quartered--I had russett potatoes so that's what I used
1 onion, peeled and cut into bite-sized pieces
4 cups water
1 (4 pound) corned beef brisket with spice packet
6 ounces beer--I just added more water
1/2 head cabbage, coarsely chopped

Directions

1.Place the carrots, potatoes, and onion into the bottom of a slow cooker, pour in the water, and place the brisket on top of the vegetables. Pour the beer over the brisket. Sprinkle on the spices from the packet, cover, and set the cooker on Low.

2.Cook the brisket for about 8 hours. An hour before serving, stir in the cabbage and cook for 1 more hour.


It's not my favorite.

But the kids and Joe give it 2 thumbs up!!
