What's for dinner? Day 34

We had a salad night tonight!  We originally found this recipe in a magazine years ago.  Family Fun maybe or something like that.

Joe and I liked it!

The kids ate some stuff out of the salad, Addison ate a little spinach, and then I think they added yogurt to the mix :)  Probably a one thumbs up and a one thumbs down for the kids :)

Grilled Shrimp Salad

1/3 cup olive oil
2 1/2 Tbsp. lemon juice
2 tsp. Dijon mustard
2 tsp. sugar
2 garlic cloves, minced (I used garlic powder)
1 tsp Greek seasoning blend
1/2 tsp salt
1/4 tsp. pepper
1 lb. large shrimp, rinsed and drained
1 15oz. can garbanzo beans, rinsed and drained
10-12 zo baby spinach leaes
1 cup cherry tomatoes, halved (I used grape and put them in whole)
1 cup, peeled, diced cucumber
1/3 cup kalameta olives (I just used whole black olives)
1/2 cup crumbled feta cheese

Preheat oven to 450.  In a small bowl, combine olive oil, lemon juice, mustard, sugar, garlic, Greek seasoning, salt and pepper.  Whisk together.  Transfer 1 1/2 Tbs. to bowl, add shrimp and toss.  Cimbine remaining dressing with garbanzo beans.  Place shrimp on baking sheet and bake for 6-8 minutes in oven on 450.  In a large bowl, toss together spinack, tomatoes, cucumber, olives and grilled shrimp.  Toss with marinated garbanzo beans and dressing.  Sprinkle with cheese.
