We enjoyed the snow today--
went to church this morning
I went to a meeting
Peyton and Joe worked on the Deathstar--
(Peyton is on the last box of pieces, progress pics tomorrow)
Addison and I went to feed the animals at our friends house and braved the snow :)
and then we had delicious soup for dinner. . .
. . .because it was definitely a soup day!!
Zuppa Toscano
Olive Garden's knock off
4 links Italian sausage (I used the kind you can get at Costco)
3/4 cup onions, diced
2 slices bacon, diced
1 tsp minced garlic
8 chicken boullion cubes
32 ounces water
2 medium potatotes, cut in half lengthwise, then cut in 1/4 slices
2 cups kale, roughly chopped
3/4 cup heavy whippeing cream
Remove casing from sausage and cut into small pieces. Cook in frying pan until done. I put in the oven at 350 for the last 10 minutes to remove any pink.
While sausage is cooking. Place onions and bacon into 3-4 quart saucepan and cook onions over medium heat until the onions are almost clear. Add garlic and cook for 1 minute.
Add chicken bouillon, water and potatoes, bring to boil and then reduce to simmer for 15 mintues. Add kale, sausage and whipping cream, then simmer for 5 more minutes and serve.
We topped with shredded parmesan cheese!
