What's for dinner? Day 5

I got this Gourment TODAY cookbook for my birthday last year and have not had a chance to use it much, so. . . . we tried a recipe tonight.

Grilled Cumin Chicken Breasts
with Avocado Salsa

For salsa:
     3 medium tomatoes, finely chopped
     2 California avocados, halved, pitted, peeled, and finely chopped
     3/4 cup red onion (I forgot to put this in)
     1 jalapeno minced
     1/3 cup fresh lime juice (from about 3 limes)
     1 Tbsp canola oil
     1 tsp salt

Stir all ingredients together. 

For chicken:
     2 Tbsp ground cumin
     1 1/2 Tbsp canola oil
     1 tsp salt
     1/2 tsp freshly ground pepper
     3 chicken breasts, trimmed and cut in half

Stir together cumin, oil, salt and pepper in a small bowl.  Pat chicken dry and rub all over with cumin mixture.  Grill chicken over indirect heat for 25-30 minutes.  Serve with salsa.



We had it with some brown rice and cooked corn!  Joe made his into a "Chipotle bowl". 

The kids and I had it all separately :)

The verdict--Joe and I liked it, Peyton didn't mind it and said thank you for the dinner Mom (he was being nice, but also looking for kudos from Sammy, our "elf"), Addison complained :) 

Everyone ate!
