What's for dinner? Day 8

Joe had a work dinner tonight--ZTE (his former company) took some AT&T people (his current company) out :)  Lucky for him!  Not so lucky for me :)

Addison and I were gone all day to La Conner (to Joe's mom's shop-Wyman Park) and then home to pick up Peyton form school and then to Addison's dance class for her dress rehearsal.

You get the picture.  Not home much today, nothing fancy for dinner :)

The kids had Cars 2--Mac and Cheese (Kraft)--I don't like Kraft Mac and cheese :(

So I had some delicious Crab Cakes that I like to splurge on at Costco!

I did make a yummy Christmas treat tonight though!

Growing up for Christmas we always had what we called:

Cereal Stuff

I have a friend who is in the medical field and we call it:

Schedule II
(that's the category that a lot of the addictive Rxs medicatons fall)

Either way you call it. . . it's yummy!

It's like a sweet version of the regular chex mix.

Cereal Stuff

1/2 box corn chex
1/2 box rice chex
sliced almonds

Mix above ingredients in a large bowl and set aside.

2 cubes butter
1 1/2 cup karo syrup
1 1/2 cup sugar
1 1/2 tsp vanilla

Mix above 4 ingredients in a saucepan.  Cook on Med-high until boiling.  Then cook for 2 more minutes.

Pour hot sauce over cereal mixture in bowl and stir.  Transfer to cookie sheet and bake in oven at 250 for 15 minutes.  Transfer back to bowl.  Mix well and let cool.

Don't eat all in one sitting! :)
